Swiss Chard & Potatoes in Cumin

Swiss Chard & Potatoes in Cumin
Serves 4 – 6


6 large potatoes, unpeeled, cut into 1” pieces (Yukon Gold or red, or equivalent of a fingerling variety)
2 Tbsp. olive oil
2 Tbsp. sugar, heaping
2 tsp. cumin
1 tsp. salt
¼ tsp. cayenne pepper
4 cups chopped up Swiss Chard
1 – 28 oz. can of diced tomatoes, undrained
Additional sugar for flavor


Boil potatoes for about 5 minutes until easily pierced with a knife.  Not too soft.  Drain.

Made with Fingerling Potatoes

Heat oil in a large skillet over medium-high heat.  Add potatoes, sugar, cumin, salt and cayenne pepper. Toss together.

Cook for  2-3 minutes.  Stir in Swiss chard and tomatoes.  Mix together.  Reduce heat to medium-low, cover, simmer 5-10 minutes. Potatoes should be soft but firm.

This is a very tasty, healthy side dish.  If you love cumin you’ll love this dish.  I also like to sprinkle a little more sugar on top when ready to eat.  If you like a little more spice, add an extra shake of cayenne pepper.
