Sassy Salsa Soup

Sassy Salsa Soup
Makes 8 – 10 Bowls

2 lbs lean ground beef or buffalo
1 onion, chopped up
3 – 4 cloves garlic chopped up
1 red, orange or green bell pepper diced up (if you like peppers add more)
1 large 28 oz can of crushed tomatoes
1 – 32 oz.  Pacific Foods beef broth
½ cup favorite salsa
1 – 15 oz can each of black beans, kidney beans and pinto beans
1 – 10 oz frozen bag of corn
1 tsp. cumin
1 tsp. chilli powder (add more if desired)
1 tsp basil (add more if desired)
1 tsp salt
½ tsp pepper

Fry the ground meat with the onion, garlic and pepper until almost cooked.  Add the spices and continue to cook until thoroughly done.  Pour meat mixture into a large pot and add the crushed tomatoes, broth, salsa and beans.  Bring to a boil and simmer for 15 minutes. Add the frozen corn and continue to simmer for another few minutes.   Add more salt if desired.

Serve the bean soup in bowls.  Top with shredded cheese and a glob of sour cream.
