Kale Yam Stir Fry

Kale Yam Stir Fry
Serves 4 – 6


4 cups kale, chopped
2 large yams or sweet potatoes, cut into ½ ” thick pieces (sometimes I use three)
1 large red onion, diced
5 – 7 cloves garlic, crushed or diced
¼ cup pine nuts or ½ cup chopped walnuts
1 tsp. Tumeric
4 pinches of cayenne pepper
¼ cup soy sauce or Bragg’s Liquid Aminos All Purpose Seasoning
2 Tbsp. Coconut oil (Virgin coconut oil is more flavourful)
Sesame oil – a few drops


In a skillet, sauté onion and garlic in Coconut oil on medium heat for a couple minutes.  Do not burn or it will ruin the flavour.

Add the yams and continue to simmer for about 5 minutes.  Add the kale and nuts and stir well over medium heat.  Add tumeric, cayenne pepper, soy sauce and just a small amount of sesame oil drizzled over.  Stir together and simmer another 5 – 10 minutes until yams are tender and kale is soft.  Stir and serve over rice.

The Kale I grew in my garden worked great in this dish.  I like Kale in a dish like this because it holds its texture well. The coconut and sesame oil add such a wonderful exotic flavour, and coconut oil is healthier than other oils.
